Beef Cauli Fried Rice

 

I was a bit of a hold out on the cauliflower craze.  The idea of using cauliflower as a “rice” was not appealing to me.  Just give me cauliflower the way I grew up eating it!  But then I tried fresh cauliflower, chopped in small pieces and stirred into a fried “rice” and I was hooked.  A lower carb option that actually tastes good.  You can use a frozen bag of cauli rice but fresh cauli rice keeps it’s crunchiness without becoming mushy.  Feel free to add your favorite stir fry vegetables and make your own version of Cauli Fried Rice.

 

1 pound of ground meat (like ground beef, chicken, pork or turkey)

½ head of Cauliflower cut into large “rice” pieces ( OR 1 bag of frozen Cauliflower Rice)

1 medium onion, chopped

1 carrot grated (or a handful of pre-shredded carrots)

1 large handful of Shredded cabbage (about a cup)

1 Tablespoon Olive Oil

¼ cup Coconut Aminos (or 2 Tablespoons Soy Sauce)

2 Eggs

Salt and Black Pepper, to taste

 

Brown meat in a skillet.  Drain meat and move to a bowl.  In the skillet, add fresh cauliflower and cook until lightly browned.  Add the carrot, onion, cabbage and sauté with the cauliflower.  Add Coconut aminos, salt and pepper to taste.  Saute until vegetables are tender.  Add cooked ground meat back to the cauliflower mixture.  Scramble 1-2 eggs. Serve when eggs are cooked.

*Can omit the meat and add 4-6 total eggs for the protein.
