When I’m not helping nutrition clients, I’m in the kitchen cooking. I’ve always loved to cook even as a kid. I got my first cookbook when I was 10 and I quickly aced French Toast and Egg in a Basket. Now that I’m on a customized eating plan due to food sensitivities, I still make that French Toast, just a much healthier version!
After learning about the nutrient density of foods in nutrition school, I aim for most of my meals to have as many nutrient rich foods as possible. This has created a running joke at our house since I will try just about anything that’s healthy. My husband calls it “weird stuff his wife will eat”! Dandelion greens, Sardines, tinned Oysters, cod livers, sausages made with organ meats, are just a few that gets a raised eyebrow from him. (They all actually taste really good!). It’s important that my family eats healthy so I aim to recreate meals that we love, just with healthier ingredients, like Chicken Cordon Bleu, Zuppa Toscana, and hearty beef stew.
I’m a forever learner and if I’m not taking a continuing ed program related to nutrition, I’m listening to podcasts on topics that range from health and wellness and business development to the Enneagram personality type (I’m a Type 3).
